If you need to edit work that you turned in, you can unsubmit the assignment before the due date, make your changes, and resubmit. However, any assignment turned in or marked done after the due date is recorded as late.
The students will need to turn in or submit the assignment into Google Classroom. Once this happens the student will have view only access to the document, and you will have edit rights to it. The due date really does not affect the editing rights of the file. Instead it will affect the status of the assignment.
