Click on the score that is showing for the specific student and click on the gray down arrow next to the score, then select View Grade Details. Click Grade in the context menu of the quiz which you wish to reset attempts on when you are viewing the Manage Quizzes page. By selecting each attempt you want to reset, and then clicking on the Reset icon at the top of the quiz attempts list, you will be able to achieve this.
