Student names are hidden while you grade and are revealed only after you post all grades. No indication of students with accommodations is shown. You can't hide or show student names after students open an assignment or test or submit attempts.

You can manually disable anonymous grading at any time by clearing the Enable Anonymous Grading check box. You can turn anonymous grading on and off until a student submits an attempt. After the first submission, you can only turn it off.

Exempting a student means that the points for that assignment do not factor into the student's overall grade and therefore do not positively or negatively impact the student's grade.
If you decide you want to change the grade and use the rubric to assign grades, select regrade with the rubric. The rubric becomes active, and you can use it to provide grades for the assignment. The new grade appears in the gradebook and the override label is removed.
