As an instructor, you can see when your students opened, started, and submitted tests and assignments with the Student Activity report. In general, this feature looks and functions the same whether you're working in an Original or Ultra course.
@harry_rubin , instructors are not notified and do not see conversation messages between students. In that sense, they are private. However, Canvas admins at your institution could access messages in a student's account, and just like anything else, messages can be captured with a screenshot and shared.Apr 3, 2018

Find the email tool for all of your courses through the Tools panel on the My Institution tab. Your instructor can also add a link to the email tool directly to the course menu. From the course menu, select Tools > Send Email.
That means that yes, your email provider can read your email. If that email provider is your school, by virtue of having an email address based on that school's internet domain, then yes; the school's IT department could be looking at what you send and then receive.Jun 4, 2014
