In the Course Management menu, go to the Full Grade Center. Click on the chevron by the column you want to hide and select Hide from Instructor View.
You can enable anonymous grading for assignments and tests that don't contain the built-in question types. You may add only text and files to anonymously graded assignments and tests. Student names are hidden while you grade and are revealed only after you post all grades.

Go to the Grade Center and use the drop-down menu next to the column header to choose "Show/Hide to Users".

You can hide student grades for an assignment in the New Gradebook. When an assignment is hidden, students can still view and submit the assignment, but the grade will be hidden. Grades will stay hidden until assignment grades are posted.
When an assignment's posting policy is changed to “manual,” grades are hidden from students and remain hidden until the instructor posts grades for the assignment. Selecting a manual posting policy for an assignment does not apply retroactively to grades already entered.Oct 30, 2019
Instructors can see if this is an issue in their courses by checking the top of each column in their grade books for the orange eye icon with a line through it. If that icon is present, students can't see that column of grades until the instructor releases them.Jul 16, 2019
